Laziji of Zaozhuang (Pepper Chicken)

  Laziji is a dish enjoyed all around China, but Zaozhuang’s Laziji is something special!

Created by a Qing Dynasty chef, Zaozhuang Laziji is made exclusively from small, free-range chickens fed with rich grains. Of course the chicken is important, but Laziji wouldn’t be Laziji without the hot peppers! Different from Sichuan’s “numbing spice”, Zaozhuang Laziji uses copious amounts of fresh hot pepper, which makes the dish extremely fragrant and heightens the taste of the chicken! Matched with a little wine, the experience is marvelous. Check out the full recipe below! 

Recipe: Ingredients: 1 Freshly slaughtered rooster, 200 grams of hot peppers, 20 grams of peppercorn, 5 eight star anise, about 10 sharp peppers, 4 cloves of garlic, 1 scallion, 1ginger, appropriate amount of coriander, 2 pieces of bay leaves, 2 pieces of cinnamon, appropriate amount of dried pepper, (Soy sauce, rice vinegar, dark soy sauce, peanut oil, chicken essence, salt, cooking wine, etc.).

1: First, clean the rooster, chop it into small pieces, pour an appropriate amount of water into the pot to boil, and add the chicken pieces to blanch water. After the chicken has changed color, take it out, rinse and control water for later use.

2: Cut the green onion, ginger and garlic, cut the chili into sections, and cut the sharp chili into two sections (if you don’t like the spicy one, you don’t need to put it), and chop up the dried chili.

3: Pour a proper amount of cooking oil into the pot, heat it up on high heat, add the pepper, star anise, and dried chili to get the aroma, then add ginger and pieces of chicken that have been dried.

4: After adding the chicken, add salt and stir fry quickly. When the chicken has changed color, add rice vinegar, spring onion, cooking wine, soy sauce, and continue to fry until the color is uniform. Add an appropriate amount of water and boil. Add the cinnamon and bay leaves, cover with a lid, and simmer for about half an hour.

5: When the time is up, open the lid, add fresh chili, garlic, and coriander, stir and stir evenly out of the pot. This delicious Zaozhuang spicy chicken is complete!
